Wash the rabbit, remove the oil from the surface and soak it in water for several hours. Add water, onion, ginger, garlic, star anise, pepper, cooking wine and salt (more seasoning can be added to make it taste faster), serve it with soup after cooking, let it cool, take it out and control to dry (or for taste). Put sugar and tea in the fumigation pot, put a baking net on it (you can also put a steamer, which feels that the baking net is better, the color is uniform and easy to clean), put rabbit meat, cover it, and smoke in the pot for about five minutes. It is too long. It tastes bitter. You don't see the rabbit's head and hind legs, do you? The rabbit's head was so ferocious that I didn't even look at it, so I didn't shoot it. The rabbit's thighs are not smoked yet, and one of them was destroyed by my baby. It was said to be delicious, so I left him another one. If you don't like smoking, you can cancel smoking directly, which can save a lot of kitchen cleaning work. You know, fumigation pots are difficult to clean. Don't be too hasty when smoking. Experienced and casual. It's my first time, but I'm very cautious, hehe.
