Production method: 1. Slice the fish and size it with egg white and water starch; Wash cucumber and slice; Black fungus is torn into small flowers; Wash carrots and slice them; Pour shredded onion, shredded ginger, minced garlic, white sugar, cooking wine, monosodium glutamate and water starch into a bowl to make sauce.
2. Heat the oil in the pan, put the fish fillets into the oil and remove the oil.

Note: If you want to fry the fish fillets large and complete, you can fry them in floating oil first, and then saute the spices. When the dish is almost cooked, put it in to keep the fish intact.
