That friend said that she is a non-picky eater (in fact, Yaomei thinks that the more non-picky eaters are, the more picky they are). In his mind, his favorite dish is egg jiaozi ... I remember when I was a child, my mother cooked this dish for my brother and me once a week. When I have it, my sister can eat a lot of rice. Just thinking about Yaomei made my mouth water, so I went home that day and made this dish at night.

Egg jiaozi
Ingredients: ten eggs, half a catty of pork belly, ten mushrooms and three tomatoes.
Side dishes/seasonings: chopped green onion, oil, oil consumption, soy sauce and sugar.
1. Break up the eggs (the number of eggs mainly depends on the proportion of meat ~ Yaomei used ten eggs this time, and this amount can make two big dishes), chop up the meat (remember to buy pork belly), put a spoonful of soy sauce, a spoonful of salt and a spoonful of raw flour, mix the chopped mushrooms and pork, mix well and marinate, cut the chopped green onion into small pieces, and chop the tomatoes for later use.
2. Start frying eggs and jiaozi ~ (It's best to fry them in a round-bottomed non-stick pan ~ It looks more like jiaozi, but because Yaomei's house is an electric oven at present, it can only be fried in a pan ~ This is a technical thing. If the egg dumplings are fried well, this dish is 80% successful! ), heat the oil in the pot, and put about half a spoonful of egg liquid into the pot for each egg dumpling.
3. Then immediately put the meat stuffing on the egg, which can be slightly biased to one side.
4. Then fold the egg in half, and the first egg will be baked in jiaozi ~ (Remember to simmer the egg on a small fire when frying the jiaozi to avoid burning the egg).
5. Fry all the eggs and dumplings and put them on a plate for later use. Heat the oil in the pan, pour in the tomatoes and stir fry for about a minute. Add half a bowl of water, cover and cook for a while until the tomatoes are soft and cooked.
6. Pour in the fried egg dumplings, add a spoonful of oil consumption, a spoonful of soy sauce, a spoonful of sugar and a spoonful of salt, and then cover the pot and simmer for one or two minutes.
7. Add chopped green onion before cooking.
