Remove cartilage from the tail of horseshoe crab, cut into thin slices, mix with refined salt 1 and monosodium glutamate 0.5 g and a little water to make juice, marinate horseshoe crab slices evenly, put duck eggs in a bowl, break them up, and add dry starch to make egg powder paste.

Fanru tablets, tender ginger, pepper slices, minced garlic, wet starch, Shaoxing wine, refined salt, monosodium glutamate and bone soup are all mixed into marinade and sliced into winter bamboo shoots.

Put the wok on a high fire. When the cooked lard is 60% hot, hang the pickled horseshoe crab slices evenly with the egg powder paste, fry them in the wok until they are 90% cooked, and take them out. Then, stir-fry the winter bamboo shoots, remove the oil from the pan, and put the oiled winter bamboo shoots on the bottom of the plate.

Put the wok on the fire, add 50g lard and heat it. Stir-fry the mushrooms in a wok for a few times, then pour in the marinade to boil and thicken. Then, add minced meat slices, add 15g cooked lard, stir-fry for a few times, and put it on the oil bamboo shoots.

Limulus lysate is pickled with juice made of monosodium glutamate, refined salt and clear water, and can be mixed with limulus lysate for seasoning. After hanging and frying, fry until there is no aftertaste.

Horseshoe crab in Miancheng
