Step 1
Remove the black lines from the prawns and put the mussels in salt water to spit out the sand. After cleaning, add brandy, a little lemon juice and white pepper and marinate for about 20 minutes. .

I use ordinary rice at home, wash it and drain it. Add diced tomatoes and garlic to a hot pot and stir-fry until the water evaporates. Add medium to small rice. Stir-fry over high heat until the rice grains turn from translucent to white, about 7-8 minutes. Add garlic and minced shallots, smoked paprika, garlic spice powder and paella seasoning powder.

After adding Spanish paella seasoning powder, the rice will turn a beautiful golden color.

Fry the seasoned rice (you can add pepper and a little salt, increase or decrease according to the amount of rice). The fried rice will absorb more soup. , full of flavor, spread the rice flat in a pan, add stock (or water and thick soup is also OK) and simmer over low heat for about 15 minutes, until the rice is full and absorbs the soup.
Step 5
Place your favorite seafood on top of the mature rice and sprinkle with basil and lemon! (I added bay leaves and garlic to the seafood beforehand and stir-fried it)
