Because my family can't eat spicy food, the fried chicken gizzard with sour beans I made is a little spicy. If you like spicy food, you can add millet red pepper and green pepper to stir fry together, which is super spicy and cool.
Ingredients: pickle beans, dried peppers, ginger, garlic slices, white rice wine, salt, oil, oyster sauce, soy sauce and sugar.
Practice steps:
Step 1: pickle the sour beans for 3-4 hours. You can search in my cookbook for how to make "quick homemade sour beans".
Step 2: Scrape the chicken gizzards with a knife, then wash them with hot water, then apply two spoonfuls of salt, and then wash them with clear water.
Step 3, then cut into thin slices, so that it is easy to cook when frying. After cutting, pour a spoonful of white rice wine and cooking oil for pickling.
Step 4, add garlic slices into the hot oil in the pot and stir-fry until fragrant.
Step 5, stir-fry the chicken gizzards evenly. When the color of the chicken gizzard is ripe, pour in the sour beans, add oyster sauce, soy sauce, sugar, dried Chili and salt and stir well.
Step 6: After seasoning is finished, there is no need to drain the water. Put it on the pot cover and stew for 1-2 minutes. Not too long, because the pickled beans are tender and fried for a long time.
Step seven, this dish is very sour and slightly spicy, because sour beans are spicy and like to eat the next meal. Pepper can be put with pickled pepper, millet pepper and green pepper.
