Ingredients: pork elbow, cooking wine, ginger, chives, cinnamon, star anise, fragrant leaves and rock sugar.
First, burn the pig's elbow to remove the hair from the epidermis and clean it with clear water, as shown below. Tip: If you think pork elbow is troublesome to handle, it is ok to ask the butcher to handle it for you.
Then put a proper amount of water in the pot, and add pork elbow, ginger, chives and cooking wine, as shown in the figure below.
Then put cinnamon, star anise, fragrant leaves and appropriate amount of soy sauce into the pot, as shown in the figure below.
Then add the right amount of salt and monosodium glutamate to the pot, as shown in the figure below. Tip: Regarding the amount of salt, Bian Xiao suggested that it would be more appropriate for everyone to add it according to their personal preferences.
Then put an appropriate amount of cooking oil in the wok, and add a few pieces of rock sugar to boil and melt, as shown in the figure below. Tip: It is best to turn on a small fire when cooking rock sugar, which can effectively prevent rock sugar from burning. Everyone must pay attention to this.
Then pour the boiled rock sugar solution into the pot and turn on a small fire 1 hour, as shown in the figure below. Tip: If you feel that the rock sugar solution is troublesome to cook, you can directly put the rock sugar into the pot to cook.
After the elbow is marinated, pour the soup left in the pot on the elbow.
