1. Prepare Longjing tea leaves and hot water: Choose good quality Longjing tea leaves. Generally speaking, the dosage for each brewing is 3-5 grams. Boil the water to around 80°C.
2. Preheat the cup: Pour hot water into the cup first, so that the cup reaches the same temperature but not too hot.
3. Rinse the tea leaves first: put the tea leaves into a teacup or teapot, soak for 5-10 seconds, and then pour out the water. This can rinse away the dust and impurities on the surface of the tea leaves.
4. First soak: Pour water around 80℃ into a cup and soak for about 1-2 minutes.
5. Pour out the tea: If you use a teacup to make tea, you can directly use a hand-held tea net to filter the tea leaves; if you use a teapot to make tea, turn the teapot upside down to allow the tea to drain naturally. Pour out until the tea is poured out.
6. Second soaking: Repeat the above steps with water of about 80℃ for the second soaking.
7. The third brew: Continue to add water and repeat the above steps. The tea soup will gradually become lighter, but the aroma and taste will still be there.
