1. Crayfish shells are edible. The calcium content in shrimp shells is indeed high, but the absorption rate is not ideal. Even soft shrimp shells cannot be chewed completely by human teeth. After being acted upon by gastric acid in the stomach, only a small part can be dissolved.
2. Head
Because the head of crayfish absorbs and processes the most toxins, it is also the part where pathogenic bacteria and parasites are most likely to accumulate. Therefore, the head part of crayfish must not be eaten, nor can it be eaten raw. If it is eaten in severe cases, it will lead to paragonimiasis.
3. Intestine
The digestive system such as the intestinal tract of crayfish is often prone to accumulation of heavy metals, so when cooking, the shrimp threads must be pulled out before eating.
4. Shrimp roe
If you are not sure whether the shrimp is clean or not, eat less shrimp roe. Shrimp yellows are the gonads of lobsters, which are close to the liver and are also susceptible to contamination. Illness develops after consumption.
