The operation steps are exactly the same except for the degree of protein dismissal.
1 let's preheat the oven first. In ancient times, the water bath method was used. Put the baking tray at the bottom, inject cold water with a height of about 1cm, preheat the cold water together, and preheat the others normally.
2. Heat the corn oil to 75-80 degrees, sift the low flour and stir well.
3. Add milk and egg yolk respectively and mix well.
Add the fine sugar, cake roll and ancient breakfast to the egg whites twice until wet and frothy, and beat the egg whites until dry and frothy.
5. Add 1/3 protein cream into the egg yolk paste and stir it, then pour it back into the protein cream and stir it evenly, then pour it into the mold and shake it a few times.
Bake in the oven. If it is a water bath, you can see that there are many small bubbles in the water in the baking tray. If it is a cake roll, turn on hot air to prevent peeling.
7 After being baked, the cake roll and Gu Zao immediately lifted the oiled paper for demoulding, and Qi Feng needed to reverse it.
