1. 1. Wash the prawns, remove the whiskers, spears, legs, and sand lines.
2.2. Place a frying pan on the fire, over medium-high heat, pour in slightly more oil than usual for stir-frying, and heat until 60% hot.
3.3. Add ginger, green onion sautéed
4.4. Pour prawns, fry until both sides become red shrimp oil, during which you can use a spatula to press a pressure, so that the prawns out of more shrimp oil.
5.5. Pour in the appropriate amount of cooking wine, cover the pot and simmer until juicing
6.6. Add more sugar to taste
7.7. Dot some balsamic vinegar and soy sauce
8.8. Simmer until juicing (about 3 minutes)
