Stir-fried yam and fungus
Ingredients: 400g of Chinese yam, 0/50g of auricularia auricula/kloc-0, 40g of refined salt 1 tsp, monosodium glutamate 1 tsp, cooking wine 1 tsp, 0.5 tsp of oyster sauce, 40g of vegetable oil, starch and shredded onion and ginger.
Exercise:
1. Burn the fibrous roots of Chinese yam with fire, remove the epidermis with tools, clean and cut into trapezoidal sections, blanch for 30 seconds, take out and cool, cut into diamond blocks, blanch for 30 seconds, take out and cool for later use;
2. Pick and wash the auricularia auricula, tear it into small pieces, blanch it in water 1 min, take it out and cool it for later use;
3. Shred onion and ginger for later use;
4. Heat the vegetable oil in the pot, saute shredded chives and ginger, pour in oyster sauce, yam and fungus, cook wine, sprinkle with refined salt and stir fry evenly, thicken, put monosodium glutamate, pour out the oil and plate.

Fried yam with cashew nuts and lettuce
Ingredients: lettuce, yam, cashew nuts, carrots, salt, cooking oil and chicken essence.
Exercise:
1, peeled lettuce, washed and cut into hob pieces. Wash carrots and cut into hob blocks.
2. Peel the yam, wash it, cut it into pieces and put it in clear water (to prevent the yam from turning black).
3. Boil a proper amount of water, pour in lettuce, carrot and yam, remove and drain.

Fried yam with tomato
Ingredients: tomato, yam, onion, garlic, salt, monosodium glutamate, peanut oil, starch and sugar.
Exercise:

2. Boil the water in the pot, put the tomatoes slightly hot, peel and dice; Cook the yam and take it out.

Fried yam with meat
Ingredients: yam, pork, cooking wine, starch, salt, onion, ginger, garlic and pepper.
Exercise:
1, sliced yam (wear gloves, because yam makes your hands itch).
2, meat slices, cooking wine, starch, salt curing.
3, the meat slices under the hot pot, served at seven minutes cooked.
