The correct way to make old hen soup is as follows:
Preparation materials: one fresh old hen, 2-3 pounds, 2-3 morels, 2-3 dried mushrooms A handful of tea tree mushrooms, a few pieces of Polygonatum odorifera, a small handful of red lotus seeds, a few lily petals and a handful of wolfberry.
1. Clean the old hen and chop it into pieces. The old hen has a long growth cycle and its meat is firm, so its nutrients can only be extracted by slow cooking, while the chicken meat is tender and more suitable for frying.
2. Put the chopped chicken into a pot with cold water, add a few slices of ginger, bring to a boil and blanch it over high heat.
3. Take it out two minutes after the water boils, rinse it under running water, rinse away the scum, and then rinse it with clean water.
4. Prepare a casserole or stew pot, put the chicken in the casserole, and other ingredients including morels, dried shiitake mushrooms, tea tree mushrooms, Polygonatum odorifera, red lotus seeds, and lilies, and then pour in enough of clean water, be sure to pour enough water.
