1. Ingredients: One crucian carp, green onions, ginger, dark soy sauce, light soy sauce, sugar, cooking wine, and 1 star anise.
2. Wash the fish and cut it with a flower knife to taste.
3. Heat the pot, add oil, and turn to high heat.
4. Put the fish into the hot oil and fry for 2 minutes, then turn to medium heat.
5. Turn over to the other side and continue to fry for 2 minutes and add ginger.
6. Pour in the cooking wine. As the wine evaporates, pour in light soy sauce and an appropriate amount of water, and add one star anise.
7. Add a small amount of sugar, do not cover the pot, and cook the fish over high heat. The amount of water used is probably just more than the fish body.
8. When half of the fish soup is left, turn the fish over.
9. When the fish soup is almost dry, add the chives and add an appropriate amount of salt to taste.
