How to make crispy barbecued pork
Ingredients
3 catties pork belly
3 white onions
500g honey
6-7 star anise
7-8 bay leaves
2 fresh sage stalks
sea salt and pepper

Step by step
Step 1: Rub the pork with clarified butter or sunflower oil, using your hands, and massage the pork for about 2 minutes, then sprinkle with salt and rub well
Step 2: Select a baking dish with a roasting rack, fill it with ?-1/3 of the mineral water, then brush the rack with oil, preheat the oven at 190 degrees, and bake in the oven at 160 degrees. Bake at 160 degrees for 2 hours. If the skin is too tough, you can wrap the meat in tinfoil and bake for about 1 hour, then take it out, remove the tinfoil and continue baking.
The third step is to make the honey sauce
Heat a small saucepan over low heat, pour in the honey, add the coriander seeds and star anise, don't stir, and let the honey cook until half of it is left, then remove from the heat
The fourth step is to make the sauce, so that the flavors can be more richly layered
Slice the three heads of white onion in half and rinse well, don't remove the skin. Heat some oil in a pan, fry the onions with the knives facing downwards, wait for the aroma to come out, put the bay leaves and sage in, add a spoonful of salt to taste, wait until you can smell the aroma a little, put the pan in the oven and roast the pork belly with the five-flower brisket for about 40 minutes
Step 5, take out the roasted pork belly and onions, let's start to make the sauce for the roasted pork
Pour the grease dripping onto the inside of the skillet during the roast into a saucepan and put it into a pot. Pour the fat that dripped into the skillet during the roasting process into a saucepan. Add a tablespoon of the honey sauce to the pan and reduce the sauce over medium-low heat to about half of its original volume

Step 6: Brush the honey sauce over the entire surface of the roasted pork, slice it into pieces and serve it on a plate, and then top it off with the onions, bay leaves and sauce from the roasted skillet to finish it off
