3. Lift the crab up and look after the sharp corners on both sides in the light. The darker the paste inside, the more full it will be.
How to choose crabs:
1, weighing: A good crab is of course heavier. Under the same size, the heavier one only means more meat and more yellow (paste). The specific method is also very simple, just find a crab with a suitable size and a heavy weight as the standard, and then use this standard to select the one with similar weight.
2, identify vitality: vibrant crabs indicate fresh and healthy. However, it should be noted that many crabs in the market are bundled and sold now, for fear that excessive crab activities will consume their own weight and lose their legs. In this case, we only need to gently touch the crab's eyes, and energetic crabs will quickly dodge the protruding eyes.
3, look at the color: look at the color in two steps: First, the crab shell should be green, the crab belly should be white, and it should not be black; Second, the crab tail should be red or yellow, and it should be tilted high (the crab shell part should be separated from the root of the crab navel and feel full), which proves that the crab yellow (paste) is full.
4, pinch soft and hard: pinch the crab's leg with your hand. If it feels soft, it means that this crab is very empty and has no meat. Crab paste and crab roe can't be very full. And if the crab legs are hard, it means that this is a "robust" crab. Combined with the above three points, you can definitely pick a good crab full of yellow paste and fat!
