Ingredients preparation: 400g beef, two green onions and 200g northeast sauerkraut. The auxiliary materials are a handful of pepper, a piece of ginger, two spoonfuls of soy sauce, one spoonful of cooking wine, one spoonful of sweet potato starch, 3 grams of baking soda (about a quarter spoon), a proper amount of salt and one third of sugar.
Cooking steps:
The first step is to prepare the ingredients: rinse the beef with water for several times, and it is best to soak it for half an hour to remove the blood, then cut the beef into thin slices (it is very important to note that when cutting the beef, it must be cut across the texture of the beef, not along the texture, otherwise the teeth will not bite), cut the green onion into oblique knife sections, wash the sauerkraut and squeeze out the water for later use, and pat the ginger flat and shred it.
The second step is my little skill, the little skill of curing beef. Put the chopped beef into a bowl, add two spoonfuls of light soy sauce and one spoonful of cooking wine, stir well, add a little baking soda, which is about a quarter of the amount of seasoning spoon, add a little sugar to freshen it up, add a proper amount of salt to season it, and finally sprinkle a spoonful of sweet potato starch and marinate for 10 minute. Beef with pickled peppers and baking soda can be fried boldly, and it won't be too dry.
Step 3, add a proper amount of oil to the pot, heat it to 60% heat, add ginger and pepper, stir-fry and make it fragrant.
The fourth step is to turn to high fire, and pour the marinated beef into the pot and stir fry quickly for 30 seconds.
Step 5: After all the beef is fried and discolored, add the drained sauerkraut and stir-fry for another 30 seconds.
Step 6: Add the chopped green onions, and finally stir fry for 1 min. When the green onions are slightly soft, they can be cooked and served. This is a nutritious and healthy dish, and beef with reasonable green onions will be ready.
