Required ingredients:
280g pork cutlet, groundnut flour, 1 tbsp soy sauce, 1/2 tsp white pepper, 11 tbsp cornstarch, egg yolk
How to make crispy pork strips:
Pork cutlets are made with a thickness of about 1cm if you buy a whole piece of pork cutlet from the market. If you buy a whole piece of pork from the market, cut it into slices about 1 centimeter thick (not bigger than 1 centimeter).
Slice it into 1-centimeter wide strips, not more than 1 centimeter wide! Then use a meat patter (I use a pole and stick) to pat the meat slightly, so that the strips become longer and thinner, the photo is before patting, after patting the length of the original about 1.5 times.
Pour the pepper, sugar, and soy sauce from the marinade into the strips, then add the egg yolks and mix well.
Add the cornstarch and mix well, leaving the sauce a little thick. Place in a plastic container or wrap in plastic wrap and marinate in the refrigerator for at least half a day, or overnight for a more flavorful marinade.
Place the meat strips, one by one, into a bowl with a generous amount of groundnut flour (I used about 5-6 tablespoons), dredge them in the flour, and shake off the excess.
Add about 4-5 tbsp of oil to a frying pan and test the oil by dropping a piece of groundnut flour into the pan and letting it bubble!
Place the meat strips in the frying pan one by one and fry until both sides are golden brown and crispy!
After frying, I'll use kitchen paper towels to absorb the oil. You can also sprinkle some black pepper on it if you like a little more flavor!
Moderate thickness allows for quick frying, while maintaining a juicy texture on the inside, making it easy to eat, crispy and flavorful! It's a great dish for young and old alike!
