Steps
1. Prepare 2 pickled peppers.
2. Peel the lotus root.
3. Soak the sliced ??lotus roots in water.
4. Prepare a little chopped green onion.
5. Heat oil in a pan and sauté garlic until fragrant
6. Add lotus root slices and stir-fry.
7. Add pickled pepper. (You should stir-fry the pickled peppers first, but I made a mistake in the steps.)
8. Add a little water and simmer for a while.
9. After the lotus root slices are cooked, add a little water starch.
10. Add appropriate amount of salt.
11. Sprinkle in the chopped green onions and stir-fry evenly before serving.
Tips
Soak lotus root slices in water to prevent oxidation. Sautéing the pickled peppers first will give them more flavor.
