Most of the molds have metal frames and non-stick coatings, except for Qifeng Cake, which needs to be climbed on the mold. Nowadays, some new molds are made of silicone, which has very good non-stick properties and is easy to peel off, but it does not generate as much heat as metal. If you need a crispy dessert, it is best to use a metal mold.
Then let’s talk about the raw material conversion for molds of different sizes, mainly cake molds. Based on the volume ratio between different molds, we can calculate the ratio between their raw materials. We know that the number of inches of a cake mold refers to the radius of the bottom of the mold. According to the volume of the cylinder = the square of the radius * pi * height, generally speaking, pi and the height are the same, so the volume ratio of the 8-inch cake mold and the 6-inch cake mold = 8 square / 6 square, which is about 1.8. Sometimes for the convenience of calculation, we directly take 2, which is why the weight of the 6-inch raw material in the formula * 2 equals 8 inches. For the irregular solid bottom mold, we can directly fill it with water, then weigh the water to calculate its volume, and then calculate the weight of each raw material based on the volume ratio.
