Ingredients selection and cutting
Choose a large, thick-fleshed, newly ripe fig, rinse it with water, and cut off the stem. If it is a large fruit variety, it can be cut, divided into two, or cut into strips. This is done to increase the contact area between the material and the drying medium, improve the air and water permeability of the material, and save drying time. time and reduce energy consumption.
Pretreatment
Use alkali solution to peel the figs, heat the prepared 4% sodium hydroxide solution to 90°C, put the figs in a stainless steel pot, Keep the temperature at 90°C for about 1 minute. Pick up the figs and wash them with plenty of water. Remember to keep rubbing and rolling, and add dilute acid to neutralize the alkalinity, so that the peel will fall off naturally. Remember to keep in mind the need during the operation. Wear gloves to avoid skin corrosion. Drain the water from the peeled figs.
Spreading and drying
The raw materials need to be spread evenly, remember not to spread them too thickly. The natural drying method is used to spread the fruits on drying trays, drying curtains, and drying mats. When the climate is dry, they can be spread out to dry day and night. In drying places with relatively damp ground, use wooden sticks, stones, etc. to pad the sun curtains, which can prevent moisture and improve the ventilation conditions. They should be turned frequently when drying.
Artificial drying is used. Ventilation and exhaust must be carried out properly while heating to facilitate the evaporation of water. The starting baking temperature should be higher, 80-85℃, and the later temperature should be lower at 50-50℃. 55℃, drying time is generally 6-12 hours, and the moisture content of dried figs is generally about 20%.
Softening and packaging
After stacking the dried figs on the plastic film, cover it with a layer of plastic film. The softening time takes 2-3 days, and then it is loaded. Put it in a plastic food bag, seal it, put it into a carton, and finally store it in a warehouse. The dried fig fruit is now complete.
