1. Ingredients: swimming crab; seasonings: refined oil, flour, salt, dark soy sauce, green onion and ginger, cooking wine.
2. Wash the swimming crabs and cut each into two sections.
3. Seal the cut edge of the swimming crab with flour.
4. Heat the oil in the pan until it is 50% hot, and touch the swimming crab's knife edge downwards to the oil.
5. Fry it, add cooking wine, salt, sugar, dark soy sauce, onion, ginger, and water.
6. Cover and cook over medium heat for 6-7 minutes (depending on the size of the crab). Remove from the pot and serve on a plate.
