What is Madeleine?
Madeleine cake is a small dessert with classic French flavor, also called shell cake. Made from a combination of low gluten flour and other main ingredients, sugar, baking powder, whole eggs, and other ingredients, it was originally used for home cooking, and slowly became popular after being loved by the majority of sweet tooth.
Origin of Madeleine: originated in France in 1730, early 19th century Napoleonic era. The Madeleine has become synonymous with memories and old times, and has become famous all over the world.
To make a Madeleine it is very simple: one pound of flour, one pound of oil, eight egg whites and yolks, three-quarters of a pound of fine sugar, one-half cup of water, a little grated lime, or chopped preserved lemon rind, and orange blossom-flavored praline; mix all the ingredients well, then knead the whole dough together, and begin to bake the whole thing in no more than 10 minutes.
