2. Take out the peanuts, spread them out and control the water. It's best to dry them in the sun until there is no water on the surface so that they don't explode when fried.
3. When the oil in the hot pan is cool, heat a frying pan and immediately add 2 tablespoons of oil, then immediately add the peanuts to the pan, keeping the heat low, and toss the peanuts a couple of times to coat them evenly with the oil, then spread them out and soak them for about 2 minutes.
4. Then turn up the heat to medium and cook, stirring quickly, until the peanuts slowly make popping noises, until there are dense popping sounds. Immediately turn off the heat and continue to stir-fry a few more times using the residual heat in the pan.
5. Drain the oil and serve on a plate.
