Materials
Clove fish half a catty 8-10 slices of dried beans, 2-3 onions, 3-4 garlic, 2 chili peppers, soy sauce, salt, sugar, a tsp. of rice wine
Practice
1
Dried beans, green onions, chili peppers, all cut into julienne strips (white onion, green onion separately). Crack the garlic and set aside. Wash the dried fish and soak in some rice wine to remove the fishy smell.
2
Heat a frying pan and saute the dried beans and dried fish. The amount of oil can be more. Stir-fry the dried fish and dried beans until they become crispy and brown, then remove them and set aside.
3
When you first put them in the pot, there is still a lot of water in the dried fish. So it will feel a little soft. However, it will become crispy after stirring for a while.
4
Drain out the excess oil and leave a little oil in the pan. Next, pop the white onion, garlic and chili. Add the dried fish and dried beans back into the pan and stir-fry with the seasonings. Add the green onions and stir-fry before serving.
