1. Chicken stewed with cordyceps.
Ingredients: 12 cordyceps, half or 1 chicken, 25 grams of ham, a little ginger, a little Shaoxing wine, 500 grams of lean meat.
Method: Cut the washed chicken into large pieces, cut the lean meat into larger pieces, add water and Shaoxing wine and simmer for two hours. Soak the Cordyceps sinensis in water first. Pour the cooked chicken and soup into a stew pot, add cordyceps, cover the pot, and simmer for two hours.
2. Duck stewed with cordyceps.
Ingredients: A bunch of Cordyceps sinensis (about 24 pieces), 1000 grams of lean duck. Seasoning: a little refined salt, a piece of ginger, a tablespoon of Shaoxing wine, four cups of boiling water, an appropriate amount of refined salt.
Method: Wash the duck and put it into boiling water, heat it on high heat for 8 minutes, take it out and wash it (you can tear off the duck skin if you are afraid of fat). Pick off the thin end of Cordyceps sinensis (retain it) and insert the thicker end into the duck body and legs to allow the nutrients of Cordyceps sinensis to penetrate into the duck meat. Put the duck, Shaoxing wine, ginger and reserved cordyceps into a vessel, add four cups of boiling water, cook over medium heat for 40 minutes, and add refined salt when eating.
3. Cordyceps stewed in chicken soup.
Ingredients: 12 cordyceps (about 10g), 1 rooster (about 500g), 15g ginger, 15g green onions, 8g salt, cooking wine.
Method: Slaughter a rooster, wash the rooster, remove the claws and internal organs, put it into a pot of boiling water and simmer for a while, take it out and wash it with cold water. Wash Cordyceps sinensis with warm water to remove sediment; wash ginger and scallions, slice them, and set aside. Cut the chicken into large pieces, add water and cooking wine into the pot, bring to a boil over high heat, then reduce to low heat and simmer for 2 hours. Cordyceps sinensis, soak in water for 10 minutes. When step 3 is completed, pour the cooked chicken and soup into the stew pot, add cordyceps, MSG, salt and other seasonings, cover and simmer over warm fire for 1 hour, and you will have delicious chicken soup.
