It is best to choose old tofu to make stinky tofu. Slice the tofu first, and then cut it into small pieces with a knife. Take some pieces of tofu milk, pour some juice of stinky tofu milk, and mash the stinky tofu milk with a spoon. Soak the cut tofu in the mixed stinky milk for a while, turn the tofu halfway, and try to soak each piece of tofu in the stinky milk. The longer the tofu is soaked, the more stinky it will be. If you don't like it, you can soak it for a while. In the process of soaking, we first adjust the juice. First, take a clean small bowl, add Chili noodles, cumin powder, oyster sauce, soy sauce and vinegar, pour a small amount of water to dilute and stir evenly. After mixing well, add a spoonful of starch to the juice and mix well for later use. ?
Pour oil into the pan, heat the oil and fry it with tofu. (Note: The water content of soaked tofu is relatively high, so be careful to spill oil. After the tofu is fried and shaped, turn it over and fry the other side. Fry the tofu until it is golden and crisp.
Pour out the excess oil in the pot, leave a little base oil, pour in the juice just prepared, and thicken.
Pour the chopped garlic and chopped green onion into the pot, turn it over evenly and then take it out. (If you don't like raw garlic, you can also fry the minced garlic first, and then pour the juice to boil the sauce. )
The fried stinky tofu is dipped in the self-made sauce, and the more you eat, the more fragrant it is. This stinky tofu is ready, without fermentation, convenient and fast, time-saving and delicious. According to Taiwan Province's "Kangjian" magazine, stinky tofu is rich in plant lactic acid bacteria, which has a good effect on regulating intestine and strengthening stomach.
Tips:
1, before frying stinky tofu, be sure to remove the stinky tofu from the tofu milk, drain the water and start frying to avoid splashing oil.
2. The prepared juice is made according to your own taste. If you like spicy food, you can add millet pepper and oil chili pepper.
