Romance of Love is indeed the easiest, but it's really hard to get the flavor right.

You can look for some of Mr. Lu Jiahong's scores, especially his book "Ping Pong Love", which is adapted from Richard Clayderman's piano music, which is very simple and nice to listen to, so you can use it to start practicing.
