Pour oil into the pan and saute shallots, ginger and garlic.
three
Add 1/4 onion and fry until slightly transparent.
four
Add chicken pieces and stir-fry until raw.
five
Add soy sauce to add color and pour in half a can of beer. Add oyster sauce, steamed fish sauce, sugar (sugar is also delicious) and salt according to taste. In order to increase the spicy taste, I added dried red pepper twice.
six
Add more than half of the remaining onions and all mushrooms and stir well. You can add Chili oil.
seven
Add a little starch, add celery, stir-fry until it is broken, and put it in a wok over high heat.
eight
Put oil in the casserole, saute a few slices of ginger and garlic, and add the remaining shallots. Onions taste good.
nine
After the onion is transparent, turn to low heat, pour the vegetables in the wok into the casserole, put the coriander if there is any, and then cover the pot. Turn off the fire.
