The wild vegetable resources in Northeast China are very rich, with a wide variety, unique flavor and rich nutrition. Wild vegetables grow in the forests of Shan Ye. They are pure green food and have no chemical fertilizer pollution. Because it is natural, harmless and nutritious, it is deeply loved by people from all walks of life. The popular wild vegetables in Northeast China mainly include: thorn bud (thorn bud, thorn dragon bud), monkey leg (Hericium erinaceus), yellow melon incense, bracken and old woman (dandelion).
The practice of bracken
Pteridium aquilinum is a pure green food with rich nutrition and medicinal value. There are many ways to eat bracken, such as frying, making soup, mixing and pickling. There are three ways to treat bracken:
1. Fresh food. After picking the bracken, blanch it in boiling water for two or three minutes, and then fry it alone or with pork.
2. salt pickling. Choose the tender bracken with neat thickness, bright color, wash it, dry it, then put it in a jar, add a proper amount of salt powder and shredded ginger for pickling, and you can take it at any time.
3. dry. Boil the collected bracken slightly, then spread it out and dry it (or dry it), and then collect it for preservation. Soak in water before cooking.
It should be noted that both fresh bracken and dried bracken should be scalded with boiling water before eating to remove the sticky earthy smell on the surface. The following are the main recipes of bracken.
1, Sauced Dragon Claw Ingredients: Yunnan wild bracken Ingredients: leeks, dried peppers, garlic sauce: Zhaotong sauce, monosodium glutamate, chicken essence Practice: ① bracken is bitter with water. (2) Put a little sauce in the pot, stir-fry the fish with dried chili, add garlic paste and stir-fry with Tang Chi. (3) Add leek and bracken, add seasoning and stir-fry evenly.
2, dragon's paw stewed bean rice ingredients: bracken, broad bean rice ingredients: canna slices, ham seasoning: soup, salt, monosodium glutamate, pepper, chicken essence, sesame oil practices: 1 bracken, broad bean rice is over-cooked, to remove odor. (2) Put a little oil in the pot, add a little soup, pour bracken and broad bean rice, boil, add seasoning and adjust the taste.
3, shrimp bracken raw materials: bracken 200 grams, fresh shrimp 50 grams, onion 5 grams, ginger 2 grams, monosodium glutamate 1 gram, salt and soy sauce, water starch 30 grams, salad oil 30 grams. Practice: ① Wash bracken, blanch it in boiling water, take it out and soak it in cold water for half an hour, and cut it into inches for later use. (2) Wash the fresh shrimps repeatedly in clean water for several times, and then put them in a dish for later use. ③ Shred onion and ginger, put salt, soy sauce, monosodium glutamate and water starch into a bowl and mix well. (4) When the wok is on fire, pour in salad oil. Heat the oil, add the onion and shredded ginger and stir-fry a few times. Stir-fry shrimps and bracken in the same wok. Pour the juice into the wok and stir well.
4, mushroom bracken raw materials: bracken 200 grams, mushroom 100 grams, carrot 20 grams, green pepper 1, onion, ginger 3 grams each, salt, monosodium glutamate, soy sauce, cooking wine, a little starch, salad oil 30 grams.
Practice: ① Wash bracken, blanch it in boiling water, soak it in warm water for about 1 hour, and take it out and cut it into pieces for later use. (2) Wash the mushrooms, cut them into thick shreds, blanch them in boiling water, and remove the dried water for later use. ③ Wash carrots and green peppers separately and cut them into small pieces for later use. ④ Wash onion and ginger and shred them for later use.
(5) Salt, monosodium glutamate, soy sauce and water starch juice for later use. ⑥ Heat the wok, pour in salad oil, stir-fry onion and shredded ginger for a while, stir-fry shredded mushrooms, bracken, diced carrots and diced green peppers for a few times, cook wine, and add juice to the bowl to stir-fry for a few times.
5, stir-fried bracken with gluten
Ingredients: 200g bracken, fried gluten100g, salt, monosodium glutamate, soy sauce, onion and shredded ginger, 50g water starch, a little sesame oil and 30g salad oil.
Practice: ① Wash bracken, blanch it with boiling water, soak it in cold water for half an hour, remove it and cut it into inches for later use. ② Cut the fried gluten into filaments for later use. ③ Mix salt, soy sauce, monosodium glutamate and water starch in a bowl for later use. (4) Heat the wok, pour salad oil, stir-fry shredded onion and ginger for a while, then stir-fry bracken and gluten in the wok for a few times, cook the seasoning in a bowl, thicken the seasoning and light sesame oil, and serve.
6, cold fern bud raw materials: 250 grams of tender bracken, a little onion, garlic, vinegar, salt, monosodium glutamate, sesame oil. Practice: ① Wash the bracken buds, blanch them in water, take them out and soak them in cold water for half an hour, and cut the onions and garlic into powder for later use. ② Put bracken buds, onions and minced garlic into a dish, add various seasonings and mix well.
7, bracken lotus root raw materials: bracken lotus root, salt, chicken essence, garlic, sesame oil. Practice: ① Wash the bracken, cut it into inches, light it in the pot, inject the broth, stew it for a while to make the bracken taste, remove it and drain it for later use; (2) Wash and peel the lotus root, cut it into thick strips, blanch it in boiling water until it breaks, take it out for later use, and mash the garlic; ③ Put lotus root and bracken into a bowl, add salt, chicken essence, sesame oil and garlic and mix well.
8. Braised pork elbow with dragon claws Raw materials: bracken, pork elbow handle, Midu pickles, Jiang Mo monosodium glutamate, chicken essence, sugar, refined salt, red oil and cooking wine: ① Braised pork elbow, boneless and diced. (2) Put the bracken neatly into the buckle bowl, and then add the elbow handle to put it neatly. (3) Add seasoning to pickled vegetables and fried Jiang Mo, and cover them on the elbow. (4) Steam for 3 hours to taste, stir fry and pour into the pot.
9, cold bracken raw materials: bracken 200 grams, gouache 50 grams, sugar, vinegar, salt, monosodium glutamate, sesame oil. Practice: ① Wash bracken selectively, blanch it in boiling water for a few minutes, soak it in cold boiling water for about 30 minutes, and cut it into pieces about 2 cm long. Blanch the soaked vermicelli in boiling water until soft, and then put it on a plate for later use. ② Soak monosodium glutamate in warm water, add sugar, vinegar, salt and sesame oil, and pour it on the dish.
10, shredded chicken with Pteridium aquilinum Raw materials: Pteridium aquilinum 200g, chicken breast 100g, dried starch 150g, salt, monosodium glutamate, cooking wine, soy sauce, shredded onion and ginger, and salad oil 500g (about 50g). Practice: ① Wash bracken, blanch it with boiling water, soak it in water for 30 minutes, and then take it out and cut it into 2 cm long sections for later use. ② Shred shredded chicken, add salt, monosodium glutamate and starch into a bowl, pour salad oil into a wok and heat to 70%, then pour shredded chicken until smooth, and control the oil for later use. ③ Heat the wok for the second time, pour a small amount of salad oil, add onion, ginger, cooking wine and soy sauce, pour shredded chicken and bracken and stir-fry for a while.
1 1, spicy bracken raw materials: 200 grams of bracken, 20 grams of hot sauce, a little salt, monosodium glutamate and shredded onion, and 30 grams of salad oil.
Practice: ① Wash bracken, blanch it with boiling water, take it out, soak it in cold water for half an hour, and then cut it into inches for later use. ② Heat a wok, pour salad oil, add hot oil into the hot sauce and stir-fry shredded onion to get red oil, stir-fry bracken for a few times, add salt and monosodium glutamate, and serve.
12, stir-fried bracken fish raw materials: bracken 250g, flour 50g, starch 20g, 2 eggs, salt, monosodium glutamate and salad oil 50g (about 70g).
Practice: ① Wash bracken, blanch it in boiling water, soak it in cold water for half an hour, take it out and dry it until there is no water on the surface. ② Take a large bowl, add flour, starch, salt and monosodium glutamate, add a little water, beat in eggs, and make it into a thick paste for later use. (3) The wok is on fire, and salad oil is injected. When the oil temperature rises to 70%, dip the whole bracken in the batter and fry it in a wok until golden brown.
13, Nami Raw Dragon Claw Roll Ingredients: Pteridium aquilinum, mullet fillet Ingredients: shredded cucumber, shredded carrot, shredded onion, ice cube seasoning: Nami juice (hot and sour, salty and fresh) Practice: ① Peel mullet fillet, cut clean meat into large pieces, and wash it with ice water until it turns white. (2) Take the tender tip of Pteridium aquilinum and cut it into pieces with the same length as the fish fillets. ③ Wrap the dragon claw tip, shredded carrot, shredded cucumber and shredded onion into sashimi rolls. (4) Take a concave dish, add ice cubes, put the fish rolls neatly on the ice cubes, and prepare a bowl of glutinous rice juice.
