Interestingly, chili peppers were first introduced from Jiangsu, Zhejiang and Guangdong and Guangxi, but were not fully utilized in those places, but became widespread in the upper reaches of the Yangtze River and the southwest.
After the Jiaqing period of the Qing Dynasty, the provinces of Guizhou, Hunan, Sichuan, and Jiangxi had already "cultivated vegetables". , and every meal and every dish must be spicy." This shows that Sichuan people have only eaten sea pepper for about 400 years. Eating Sichuan peppercorns is an old tradition for us Chinese, especially for Sichuan people. The "Huayang Guo Zhi·Shu Zhi" written by the Jin Dynasty more than 1,600 years ago said: Shu people "appreciate taste and like spicy fragrance". Zanthoxylum bungeanum is native to China and is a unique spice in China. It is not used in Western food yet. As early as the "Book of Songs", "pepper" was mentioned in many places. "The Book of Songs·Zhou Song" said: "There is pepper and it is sweet, and Hu Kao is peaceful." Historically, it was also called Sichuan pepper, Han pepper, Ba pepper, Qin pepper, Shu pepper, etc.
