What kinds of fermented tea are there?
Fermented tea is a kind of tea production technology, which refers to tea that is refined after primary processes such as withering, twisting, fermentation and drying. According to the fermentation degree of tea green, fermented tea can be divided into non-fermented tea, semi-fermented tea, fully fermented tea and post-fermented tea.

Tea, we are familiar with green tea, white tea, yellow tea, green tea, black tea and black tea. So how are these divided? Look at our title and you will know what the core is. Yes, it is classified according to the degree of fermentation.

Accord to their fermentation degree, their classification is obvious:

Green tea: 0%

White tea: 0%- 10%

Yellow tea: 10%-20%

Green tea: 30%-60%

Black tea: 80%-90%

The degree of fermentation reflects the amount of new substances produced in the production process. The higher the fermentation rate, the more thorough the transformation of the substances contained, the lower the fermentation rate, and the closer the tea is to the natural state. Oolong tea belongs to semi-fermented tea, black tea belongs to fully fermented tea, and black tea belongs to post-fermented tea.

The most representative of the six kinds of tea are:

Green tea: West Lake Longjing, Dongting Biluochun, Anji White Tea, Huangshan Maojian, Luan Guapian and Taiping Monkey Kui.

White tea: white silver needles, long-lived eyebrows.

Yellow tea: Junshan Yinzhen, Guangdong Dayeqing, Mengding Huangya.

Green tea: Anxi Tieguanyin, Wuyi Dahongpao, Phoenix Narcissus, Water Turtle and Lohan.

Black Tea: yunnan black tea, Jin Junmei, Qimen Black Tea, Zheng He Kung Fu.

Black Tea: Anhua Black Tea, Palace Pu 'er Tea and Shengtuo Tea.

According to the degree of fermentation, it can be divided into the following categories:

1, semi-fermented tea (partially fermented, scientific name: green tea)

A. Light fermented tea (also called "packaged tea"): white tea, Wenshan packaged tea (green tea), Yilan packaged tea, Nangang packaged tea, scented tea, Mingde tea, frozen top tea, pine and cypress green tea, Tieguanyin, Wuyi and Narcissus.

B. heavy fermented tea: (scientific name: oolong tea).

Note: Semi-fermented tea is commonly known as "oolong tea". Tea with a fermentation degree of only 20%-70% is generally called oolong tea. For example, Tieguanyin and Wuyi Rock Tea are all semi-fermented teas, which are very distinctive and have a sweet taste. The real "Oolong Tea" is Oriental Beauty Tea, that is, Bai Hao Oolong Tea, or also called Dengfeng Tea, but the common name of Oolong Tea has actually been confused.

2. Fully fermented tea (scientific name: black tea)

Fully fermented tea is tea with a degree of fermentation above 80%. Among the six major teas in China, only black tea belongs to fully fermented tea, such as Qimen black tea and Zhengshan tea. The whole fermented tea has a strong aroma and a fresh and mellow taste.

According to varieties: lobular black tea, Assam black tea (big leaf)

According to the shape: strip black tea, broken black tea and ordinary black tea.

Note: 1. Dahongpao is not black tea, but green tea (oolong tea); Anji white tea is not white tea, but green tea.

3. Post-fermented tea (scientific name: black tea 1653)

Post-fermented tea is also a kind of tea made by fermentation technology, but it takes a long time to accumulate and ferment in the production process. Pu 'er tea: Pu 'er tea is pretreated with non-fermented tea and then fermented by heap fermentation.

Black tea belongs to post-fermentation tea, and its varieties include Anhua black tea and Liubao tea.
