Durian is covered with "hills", which is called "mace". Generally, it is big and short, but the flesh is full and thin. If it is long and sharp, the pulp is not full and thick. Look at the maturity of durian: choose two adjacent spikes, hold the tips of the spikes with your hands, and pinch them inward with a little force. If it is easier, they can be "close" to each other, indicating that durian is soft and ripe; If it feels very solid, it can't be pinched at all, which means durian is relatively raw.
2. Look at the bottom of the head size
Durian with a larger body will be better. Judging from the color of the shell, durian is more transparent yellow, which means it is ripe; If there is more cyan, it means it is not mature enough. The bottom of durian, that is, the "durian butt", should generally not be too sharp. It would be better to choose a flat point, and there will be more meat inside.
3. Look at the degree of cracking
Choose the durian shell that has been cracked (it is best to choose the crack not too big), that is, it has just begun to crack; Or if there is no opening, you can gently pry it open with a knife; If the fruit has already cracked, the exposed pulp will be easily polluted and deteriorated.
4. Smell the smell
When buying, you can smell it near the bottom of durian, and the smell of mature durian is rich and fragrant; Immature durian has a "green smell" and smells like freshly cut grass; If it smells like alcohol, it means that the pulp has gone bad.
5. Look at the "tail" of durian
The "tail" of durian is the fruit handle. If it looks thick and fresh, it proves that it is nutritious and fresh in quality, which is another "indicator" for selecting durian. Press it gently with your nails, and the marks indicate that it is fresher. If the fruit stalk is small and dry, it means that durian has been stored for a long time and is not very fresh;
6. Shake the pulp
Pick up the durian gently, hold it firmly, and gently shake the durian with your hands. If you feel a slight collision or a slight noise inside, the pulp is ripe and detached from the shell. This durian is a mature good durian.
