Corn candy is a small triangular candy, usually divided into three parts, with different colors, waxy texture and flavor based on honey, sugar, butter and vanilla. The traditional colors of corn candy are yellow, orange and white, representing autumn harvest or corncob, and the wide yellow end is similar to corn kernels.
At first, candy was made by hand. The manufacturer first mixes sugar, corn syrup, carnauba wax and water and cooks them into a slurry. Soft candy adds texture and marshmallow, and adds a soft bite. The final mixture is then heated and poured into a molding mold. In the pouring process, it needs to be treated three times and each colored part needs to be treated once.
Today's recipes are basically the same. Although the task originally completed by hand was quickly taken over by the machine made for it, the production method called "corn starch modeling" remained unchanged.
Pour the cooked cornmeal porridge into a jar, add cold water, slowly cool it to 70℃, add 200 grams of 25,000 units of amylase, dissolve it in warm water, stir it evenly, and then stand for saccharification for not less than 25 minutes. After adding amylase for a certain period of time, the porridge began to creep and turn to flowers, and gradually became clear. If the amylase fails or the amount is small, some amylase can be added to achieve the standard effect.
Another popular variety is called "Harvest Corn", which is characterized by chocolate brown wide end, orange center and sharp white tip, and is usually used around Thanksgiving. During Halloween, there will be blackberry pie corn candy and pumpkin-shaped corn candy in eastern Canada.
The candy store also introduced other colors suitable for other festivals. Christmas varieties (sometimes called "reindeer corn") usually have a red end and a green center; Valentine's Day variants (sometimes called Cupid corn) usually have a red end and a pink center.
Although this kind of corn candy is not really corn candy technically, corn candy-flavored snacks have become more and more popular, including candy corn-flavored snack foods and candy variants, such as candy corn-flavored Oreo, corn candy M & M&M's, corn candy-flavored cotton candy and so on.
