How to make almond tofu (fancy)?
Dissolve the agar powder with 100g of water and set aside. (You can also use gelatine powder, the total ratio of powder to liquid needs to be adjusted by you)
Prepare a milk pot (a clean pot is OK), add 400g of water and milk, and cook over low heat until it is almost When it is still boiling, remove from the heat, pour in the agar powder water, stir continuously while pouring, then pour in the condensed milk and sugar, and after boiling, pour in the almonds (a mixture of almond powder and almond milk).
After the liquid is finished, filter it and pour it into your mold (I use a silicone cake mold, as shown in the picture), wait for it to cool and put it in the refrigerator.
Usually it will be formed and cold after an hour, so be gentle and put it on the plate in good shape and enjoy.
Tips
(1) The cabbage powder I use is made in Taiwan and can be purchased on Taobao. I also often use gelatine flakes or gelatine powder, and I have also used agar-agar. The softness and texture of the finished product are different depending on the ratio. Usually, the agar powder is crispy and the gelatine powder is soft and tender.
(2) Some stores on the market make very delicious almond tofu, most of which add fresh cream or glutinous rice flour or corn starch (I have tried them all, and they are all delicious).
